Gluten & Dairy Free Egg, Spinach & Salsa Breakfast Tortillas

You can buy some great gluten free tortilla wraps in the supermarket now, a personal favourite of mine is the BeFree wraps. I’ve used them in this simple but nutritious breakfast.




  • 2 large handfuls of spinach
  • 2 eggs
  • 2 tablespoons tomato salsa
  • 2 gluten free tortilla wraps
  • salt and pepper for seasoning


  1. Cook the tortilla wraps in a large shallow pan for 1 minute on each side
  2. Saute the spinach for 1 minute then place on the tortilla wrap
  3. Fry the eggs until the yolk is almost set
  4. Place on top of the spinach
  5. Top with a little salsa
