Chia seed pudding is fast becoming one of my favourite breakfasts for a number of reasons. One it is super quick to make and I can do it the night before, second it is really easy to make gluten and dairy free and third the favour possibilities are endless.
I do admit that sometimes it doesn’t look the most appetising but if you can get beyond that it is a really tasty start to the day.
- 1 medium sized banana, mashed
- 1 tablespoon maple syrup
- 2 tablespoons chia seeds
- 175ml dairy free milk
- Stir together the banana, maple syrup and dairy free milk
- Mix in the chia seeds
- Pour into a serving bowl and refrigerate overnight
- Top with your choice of fruit or gluten free granola
