Gluten and Dairy Free Courgette Relish

Description

Ingredients

  • 1kg courgette, I used yellow courgette but green is fine as well
  • 1 granny smith apple
  • 1 large onion
  • 1 red pepper
  • 2 garlic cloves, minced
  • 250g brown sugar
  • 250ml apple cider vinegar
  • 2 teaspoons ground ginger
  • 1/4 teaspoons dried chilli flakes
  • salt and pepper for seasoning

Method

  1. Cut the ends of the courgettes and then dice into small cubes
  2. Peel and core the apple then cut into small chunks
  3. Dice the onion and pepper
  4. Place the courgette, apple, onion, pepper, garlic, brown sugar, vinegar, chilli and seasoning in a large pan
  5. Bring to the boil then simmer for 80 minutes with the lid off or until a thick relish consistency
  6. Spoon into two sterilised jars
