Gluten and Dairy Free Coconut Quinoa Flapjacks

I like to enjoy a flapjack as a treat for breakfast every so often with some fruit and a big mug of coffee. Lots of flapjacks are just loaded with sugar so I’ve tried to make a healthier (but still as tasty) version, which is of course gluten and dairy free. Rather than use butter and golden syrup I’ve gone with coconut oil and honey instead. I’ve also tried to up the nutritional value by adding income chia seeds and quinoa flakes which you can pick up from one supermarkets or health food stores.
350g gluten free oats
2 tablespoons quinoa flakes
2 tablespoons chia seeds
2 tablespoons desiccated coconut
2 tablespoons sultanas
130g coconut oil
5 tablespoons honey
Preheat the oven to 160 oC
Place the oats, quinoa flakes, chia seeds, coconut and sultanas in a large bowl
Add the coconut oil and honey into a small saucepan and heat gently until melted and well combined
