Gluten and Dairy Free Clafoutis

The clafoutis comes from the Limousin region of France, and is a sponge like cake with cherries. When other kinds of fruit are used instead of cherries, the dish is properly called a flaugnarde. The dish’s name derives from Occitan clafotís, from the verb clafir, meaning “to fill”.




  • 150g cherries, pitted
  • 75g caster sugar
  • 3 eggs
  • 300ml dairy free milk
  • 75g gluten free plain flour
  • 1 teaspoon xanthan gum
  • 1 lemon, zested
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon


  1. Grease a 1.2l casserole dish
  2. Preheat the oven to 180 oC
  3. Beat together the sugar, eggs, milk, flour, xanthan gum, lemon zest, vanilla extract and cinnamon
  4. Pour into the casserole dish
  5. Scatter the cherries over the batter
  6. Bake for 50 minutes
  7. Leave to stand for 5 minutes then slice and serve dusted with a little icing sugar
