Gluten and Dairy Free Cinnamon Buns

  1. To make the bun dough combine all the ingredients in a large bowl and beat for 5 minutes with an electric paddle mixer or hand knead on a well floured surface
  2. Roll the dough out into a large rectangle, about 2cm thick
  3. Spread over the melted butter and sprinkle on the cinnamon, ginger, nutmeg, sultanas and brown sugar
  4. Roll up the dough tightly, like you are making a swiss roll
  5. Slice into 8 rounds and shape into buns
  6. Place on a parchment lined baking sheet and leave in a warm place for about 20 minutes
  7. Preheat the oven to 200 oC and bake the buns in the middle of the oven for 20 minutes
  8. Remove from the oven and place on a wire rack to cool
  9. Combine the icing sugar, water and lemon juice and spread on the top of each bun
