Churros are a real treat I used to enjoy in Spain before my diagnosis. You get cafes dedicated just to selling churros with the most beautiful hot chocolate to dip them in. I decided to have a try at making a gluten and dairy free version of them. You can dip them in melted dairy free chocolate or use a dairy free carob based sauce like ChocShot. Alternatively you can just eat them as is or mix a little cinnamon in with the sugar.

Happy Birthday to my dear friend Jose-Maria, I hope you have a wonderful day.

  • 250ml water
  • 2 tablespoons of caster sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon xanthan gum
  • 2 tablespoons vegetable oil
  • 125g gluten free plain flour
  • oil for frying and sugar for dusting

gluten free churros

  1. Place the water, sugar, salt and oil in a pan over a medium heat and bring to the boil
  2. Remove from the heat and stir in the flour and xanthan gum until it forms a ball
  3. Place into a piping bag with a thick nozzle
  4. Heat enough oil in large pan or deep-fryer to 190 oC
  5. Pipe strips of the dough into the oil and cook for about 4 minutes
  6. Toss in caster sugar and serve immediately
