Gluten and Dairy Free Christmas Granola

For those of you that follow the site regularly you will know I love making my own granola and frequently post different granola recipes. This weekend I decided to give my usual granola a bit of a Christmassy spin and incorporate some seasonal flavours into it – cranberries, oranges and cinnamon. A perfect start to the wintery mornings.




  • 125ml fresh orange juice
  • 50g brown sugar
  • 80ml maple syrup or honey
  • 60g cashew nut butter
  • 1 teaspoon orange zest
  • 50g shredded coconut
  • 60g coconut oil
  • 250g gluten free oats
  • 150g sliced almonds
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 200g dried cranberries

  1. Preheat the oven to 150 oC
  2. Line 2 baking sheets with parchment paper
  3. Place the orange juice, sugar, maple syrup, cashew nut butter and orange zest into a saucepan
  4. Bring to the boil and simmer for 5 minutes, whisking until well combined
  5. Stir in the coconut oil and remove from the heat
  6. Place the oats, coconut, almonds, cinnamon, ginger, nutmeg and cloves in a large bowl
  7. Stir in the liquid from the saucepan
  8. Spread out evenly across two baking sheets
  9. Bake for 30 minutes, stirring the granola after 10 minutes and 20 minutes to allow even baking
  10. Remove from the oven and allow to cool completely
  11. Stir in the cranberries
  12. Store in an airtight container
