I’m addicted to the chocolate and pear combination just now – I had dairy free chocolate and pear ice-cream in Rome which was amazing. I’ve recently developed a recipe for my new cook book for a gluten and dairy free chocolate and pear loaf. This time I’ve used the combination for a new flapjack recipe. After pulling together the 7 day meal plan last week and looking at my banana flapjack recipe I realised I hadn’t made them in a while. I hope you like this new flapjack recipe.

  • 115g dairy free spread
  • 70g soft brown sugar
  • 3 tablespoons honey/agave
  • 350g gluten free porridge oats
  • 1 large ripe pear, peeled and cut into small cubes
  • 100g dairy free dark chocolate chips

  1. Preheat the oven to 160 oC
  2. Grease and line a 20cm traybake tin
  3. Place the dairy free spread, sugar and honey/agave into a saucepan and heat gently until melted
  4. Stir in the oats
  5. Stir through the pear and chocolate chips
  6. Press into the baking tin
  7. Bake for 30 minutes
  8. Remove from the oven and allow to cool for 20 minutes in the tin
  9. Cut into 9 squares and allow to cool completely
