I went to Rome last month for a holiday (I’ve still to write up gluten and dairy free foodie finds) and we all brought home panettone as gifts since it was so close to Christmas. This inspired me to try and see if I could make a gluten and dairy free version. I made my panettone chocolate and orange but you could replace the chocolate chips with dried fruit for a more traditional recipe.

For whatever reason I found it quite difficult to photograph so I decided I would slice it and take some photos, however I forgot to do that and it was all eaten by the time I remembered. So sorry for the poor photo but hopefully the speed at which it was eaten will give you some indication as to the taste! I don’t think traditional panettone have a crack along the top but I’m going for a rustic version (well that’s my excuse!)

  1. In a large bowl add the warm milk, 1 teaspoon of the sugar and the yeast
  2. Leave to stand for 10 minutes
  3. Whisk in the eggs and egg yolks
  4. Sitr in the orange zest, flour, salt, sugar, vanilla and dairy free spread
  5. Need with a dough hook for 5 minutes or by hand for 8 minutes
  6. Mix the chocolate chips into the dough
  7. Cover with clingfilm and leave in a warm draft free place until doubled in size, about 2 hours
  8. Punch down the dough and then place in a deep sized 6″ cake tin lined with foil
  9. Leave to rise for another hour
  10. Preheat the oven to 180 oC
  11. Bake for 1 hour
  12. Leave to cool in the tin for 1 hour
  13. Remove and allow to cool completely before slicing
