Gluten and Dairy Free Chocolate Courgette Cake

Baking sweet cakes with vegetables has been ‘fashionable’ for a few years now with items like beetroot brownies popping up in cafes. Courgette has been frequently used in a number of cakes so I decided to have a go and making a chocolate courgette cake.

I understand this isn’t for everyone but I enjoyed the cake. The result was a not too sweet, very moist chocolate cake with a hint of cinnamon. You could top with with dairy free chocolate glaze for a more decadent treat.





  1. Preheat the oven to 160 oC
  2. Grease a 9″ cake pan, I used a bundt pan
  3. Place all the ingredients in a large bowl and mix until well combined
  4. Pour into the cake tin
  5. Bake in the centre of the oven for 65 minutes
  6. Remove from the pan and allow to cool
