Gluten and Dairy Free Chocolate Courgette Cake

Baking sweet cakes with vegetables has been ‘fashionable’ for a few years now with items like beetroot brownies popping up in cafes. Courgette has been frequently used in a number of cakes so I decided to have a go and making a chocolate courgette cake.
I understand this isn’t for everyone but I enjoyed the cake. The result was a not too sweet, very moist chocolate cake with a hint of cinnamon. You could top with with dairy free chocolate glaze for a more decadent treat.
240g gluten free self-raising flour
1 teaspoon xanthan gum
60ml vegetable oil
120ml dairy free natural yoghurt
150g caster sugar
80ml dairy free milk
30g dairy free cocoa powder
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves, optional
2 medium sized courgettes, grated
50g dairy free dark chocolate, melted
Preheat the oven to 160 oC
Grease a 9″ cake pan, I used a bundt pan
Place all the ingredients in a large bowl and mix until well combined
