Gluten and Dairy Free Chocolate Caramel Muffins

I had a little dairy free caramel sauce left over from another recipe I was using so I had a think about a new recipe I could try to use it up and these muffins are perfect. From the outside it looks like a normal chocolate muffin but bite into the centre and you get a delicious bubble of caramel. Sometimes you just can’t beat a good muffin recipe, especially a gluten and dairy free one!

  1. Preheat the oven to 180 oC
  2. Beat together the caster sugar and the dairy free spread until light and fluffy
  3. Add the three eggs individually, beating well between each addition
  4. Add in the flour, cocoa, baking powder and xanthan gum
  5. Mix until well combined
  6. Stir in the chocolate chips
  7. Line a muffin tin with paper cases
  8. Place one tablespoon of the muffin mix in the bottom of each of the paper cases
  9. Drizzle a little caramel sauce in the middle of the muffin
  10. Top each muffin with another tablespoon of mixture
  11. Bake in the centre of the oven for 25 minutes
  12. Remove from the oven and allow to cool before enjoying
