Gluten & Dairy Free Chicken, Tomato & Sweet Potato Bake

Ingredients

  • 2 Chicken breasts Cut into 3 chunks
  • 250 g Sweet potatoes Peeled and cut into chunks
  • 1 Onion Cut into chunks
  • 1/2 broccoli head Cut into florets
  • 8 cherry tomatoes
  • 2 Garlic cloves Minced
  • 1 Tsp Rosemary
  • 1 Tsp Thyme
  • 1 Tbsp Olive oil
  • 1 Tsp Smoked paprika
  • 1 Tbsp Lemon juice
  • 100 Ml Chicken stock
  • salt and pepper for seasoning

Instructions

  • Preheat the oven to 180 oC
  • Place the sweet potatoes, onion, broccoli, cherry tomatoes, minced garlic, rosemary, thyme, olive oil, paprika, lemon juice and seasoning into a large bowl
  • Mix until well combined
  • Pour into a casserole dish and roast in the oven for 25 minutes
  • Add in the chicken and chicken stock
  • Return to the oven for 25 minutes
