Gluten and Dairy Free Chicken & Avocado Sushi

The origin of sushi is believed to have been during the second century A.D. in Southeast Asia. It developed through a need to keep meat fresh without refrigeration. Meat and fish would be cured and wrapped in rice to preserve its freshness. The idea eventually spread through China and then to Japan, where fish is a food staple. The Japanese would ferment their cured fish and rice sushi with Japanese rice wine, or sake.

A lot of sushi is naturally dairy and gluten free, just be careful of any wheat based soy sauce.


  • 125g sushi rice
  • 165ml water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 sheet nori
  • 100g cooked chicken, sliced
  • 1 avocado, mashed
  • 2 teaspoons lemon juice
  • salt & pepper for seasoning


  1. Rinse the sushi rice and place in a pan with the water
  2. Bring to the boil and simmer for 10 minutes with the lid on
  3. Turn off the heat and allow to stand for 25 minutes, keeping the lid on
  4. Mix together the rice vinegar and sugar and season with salt and pepper
  5. Sir through the sushi rice
  6. Mash the avocado, season and stir through the lemon juice
  7. Spread the sushi rice over the nori sheet
  8. Place the chicken over the rice
  9. Spread over the mashed avocado
  10. Roll up the nori sheet and slice into 6 pieces
  11. Serve with the sweet chilli dipping sauce
