Gluten and Dairy Free Cheese and Chive Soufflé

Soufflés are a lovely traditional French treat an can be either savoury or sweet. Either way they are usually made with ingredients containing gluten and dairy. I’ve made a gluten and dairy free cheese and chive version, I used Scheese cheddar style cheese.




  • 20g dairy free spread
  • 1 tablespoon polenta
  • 2 tablespoons gluten free plain flour
  • 200ml dairy free milk
  • 1 tablespoon chives
  • salt and pepper for seasoning
  • 3 eggs separated
  • 75g dairy free cheddar style cheese, grated

  1. Grease 2 ramekin dishes with dairy free spread
  2. Sprinkle the bottom and sides with the polenta, tipping any excess out
  3. Preheat the oven to 180 oC
  4. Whisk the egg whites with an electric whisk until it forms soft peaks
  5. In a medium sized saucepan melt the dairy free spread
  6. Stir in the flour and mix well
  7. Gradually stir in the milk
  8. Bring to the boil and simmer for 5 minutes, stirring continuously
  9. Season with salt and pepper
  10. Stir in the diary free cheese, chives and egg yolks
  11. Remove from the heat and stir in the beaten egg whites
  12. Divide between the 2 ramekins
  13. Bake in the centre of the oven for 20 minutes
  14. Serve immediately
