Gluten and Dairy Free Caramelised Onion Hummus
serves / makes
1 onion, diced
1 garlic clove, minced
2 tablespoons olive oil, for caramelising the onions
240g cooked chickpeas
1/2 tablespoon tahini
2 tablespoons lemon juice
30ml olive oil
salt and pepper for seasoning
Caramelise the onions and garlic in a saucepan over a medium heat, this takes about 10 minutes. The onions should be soft and golden but not crispy.
Add all the ingredients into a blender and blitz until smooth. If the humous is too thick add more olive oil or water.
