Gluten and Dairy Free Blueberry Buns

I’m not a huge fan of shop bought blueberry muffins, the fruit always tastes bit fake and the sponge can be quite heavy. These buns are easy to make, are gluten and dairy free and loaded with fresh blueberries.

They are light as a feather and very versatile, have them as a treat for breakfast, afternoon tea or in pack lunch boxes. They can easily be frozen and defrosted when required.



Blueberry Muffins 2

  1. Preheat the oven to 200 oC
  2. Line a muffin tin with 8 paper cases
  3. Whisk together the eggs, milk and melted butter
  4. Stir in the flour, xanthan gum, sugar
  5. Mix until well combined
  6. Stir in the blueberries
  7. Divide the mixture between the eight muffin cases
  8. Bake in the centre of the oven for 25 minutes
  9. Remove from the oven and allow to cool
