Gluten and Dairy Free Banana and Peanut Granola

Description

Granola is one of my favourite breakfasts, especially when it is accompanied by dairy free yoghurt ad some fresh berries. I have a few versions of gluten and dairy free granola on the website if you don’t fancy this flavour combination.

Ingredients

  • 60g coconut oil
  • 120ml honey
  • 125g peanut butter, smooth or crunchy
  • 250g gluten free oats
  • 1 teaspoon ground cinnamon, optional
  • 150g peanuts
  • 100g dried banana chips

Method

  1. Preheat the oven to 150 oC
  2. Line 2 baking sheets with tinfoil
  3. In a small saucepan gently heat the coconut oil and honey until melted together and smooth
  4. Stir in the peanut butter and mix until well combined
  5. Remove from the heat
  6. In a large bowl place the oats and cinnamon
  7. Pour the honey mix over the oats
  8. Stir until all the oats are well coated
  9. Spread out the oats between the 2 baking sheets
  10. Bake for 30 minutes, stir every 10 minutes
  11. Remove from the oven and allow to cool
  12. Stir through the peanuts and banana chips
  13. Store in an airtight container
