Gluten and Dairy Free Banana Chocolate Chip Flapjacks
serves / makes 12 30 prep time 30 mins cooking time
I’m a big fan of flapjacks and I’ve recently being experimenting with different flavours. This recipe is for banana choc chip (dairy free chocolate of course) flapjacks. The banana makes the flapjacks lovely and moist and the chocolate chips kind of melt and swirl though the oats. I made mine, cut them into squares, individually wrapped them and then popped them in the freezer to pop into my lunch box for the next few weeks.
I have to start thinking of my next flapjack flavour combination now!
115g dairy free spread
70g soft brown sugar
3 tablespoons honey/agave
350g gluten free porridge oats
1 large ripe banana, peeled and mashed
100g dairy free dark chocolate chips
Preheat the oven to 160 oC
Grease and line a 20cm traybake tin
Place the dairy free spread, sugar and honey/agave into a saucepan and heat gently until melted
Stir in the oats
Stir through the mashed banana and chocolate chips
Press into the baking tin
Bake for 30 minutes
Remove from the oven and allow to cool for 20 minutes in the tin
