Gluten and Dairy Free Baked Chocolate Donuts

i love donuts and they are relatively simple to make. You can prepare the dough in advance and keep it the fridge so you can cook the donuts to order. I usually fry my donuts but I thought I would have a go at making a healthier baked version. They are ever so slightly drier than the fried version but definitely worth trying.




  • 7g dried fast active yeast
  • 40ml water, warmed in microwave for 20 seconds
  • 175ml dairy free milk, warmed in microwave for 30 seconds
  • 315g gluten free bread flour
  • 50g dairy free cocoa powder
  • 1 teaspoon xanthan gum
  • 55g caster sugar
  • 1/2 teaspoon salt
  • 1 egg
  • 35g dairy free spread


  1. Add all the ingredients into a bowl and beat for 5 minutes to activate the yeast
  2. Cover the bowl with cling film and leave to rise in a draft free warm place for 60 minutes
  3. Roll out to about 1/2″ thick on a piece of baking paper
  4. Cut out 9 circles, then stamp out a small hole in the middle
  5. Preheat the oven to 180 oC
  6. Place on a baking sheet, cover and leave to rise for 30 minutes
  7. Bake for 20 minutes
  8. Drizzle with your choice of glaze or toss in sugar
