Gluten and Dairy Free Baked Apple & Cinnamon French Toast

Description

Make up this breakfast bowl and pop it in the oven while you hop in the shower. It is kind of a cross between french toast and a lighter version of bread pudding.

Ingredients

  • 2 slices of gluten free wholemeal bread
  • 150ml dairy free milk
  • 3 tablespoons apple sauce
  • 2 tablespoons maple syrup
  • 1 egg
  • 1 teaspoon ground cinnamon
  • 2 tablespoons sultanans

Method

  1. Preheat the oven to 180 oC
  2. Grease 2 individual ramekins
  3. In a medium sized bowl whisk together the milk, apple sauce, egg, cinnamon and maple syrup
  4. Stir in the sultanas
  5. Tear the bread into bite sized chunks and stir into the milk mixture
  6. Spoon into the 2 ramekins
  7. Bake in the oven for 25 minutes
