Gluten and Dairy Free Avocado and Sundried Tomato Pasta

  1. Mash the avocado until smooth
  2. Cook the pasta per the instructions on the packet
  3. Saute the onion, chilli and garlic in the olive oil over a medium heat for a couple of minutes
  4. Pour in the dairy free cream, add the oregano and season with salt and pepper
  5. Cook for a couple of minutes
  6. Stir through the avocado, sundried tomatoes and pasta
  7. Divide between two bowls and top with the dairy free cheese
