Gluten and Dairy Free Avocado Rice Cakes

Sometimes the simplest of things are the tastiest – this recipe is so simple it’s almost not a recipe! On their own rice cakes can be a little bland and boring, top with seasoned avocado and a poached egg for a healthy, nutritious bite to eat.




  • 2 gluten free rice cakes
  • 2 eggs
  • 1 avocado
  • pinch of chilli flakes
  • 1 teaspoon lime juice
  • salt and pepper for seasoning
  • large handful of rocket
  • drizzle of balsamic glaze


  1. Bring a pan of salted water to the boil
  2. Crack each egg into the water and poach for 3 minutes
  3. Mash the avocado and stir in the chilli flakes, lime juice and season to taste
  4. Spread the avocado on the rice cakes
  5. Lay on the poached egg
  6. Top with the rocket and a drizzle of balsamic glaze
