Apple and Ginger Crumble Cake

For the cake:

  • 200 g dairy free spread
  • 300 g self raising gluten free flour
  • 4 eating apples peeled, cored and diced into 1/2cm cubes
  • 120 g light brown sugar
  • 100 g caster sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 4 eggs

For the crumble topping:

  • 125 g gluten free plain flour
  • 50 g brown sugar
  • 1 teaspoon ground ginger
  • 60 g dairy free spread melted


  • Preheat the oven to 160 oC
  • Grease and line a 9" round cake tin
  • Place the chopped apples in a small bowl and toss in the cinnamon
  • In a large bowl beat together the dairy free spread, caster sugar and light brown sugar
  • Add in the eggs one at a time beating well between each addition
  • Mix in the flour and ground ginger
  • Stir in the apples
  • Pour the mixture into the cake tin
  • Make the crumble topping by mixing together the plain flour, brown sugar, ginger and melted butter
  • Pour over the top of the cake
  • Bake in the centre of the oven for 1 hour and 45 minutes
