Gluten and Dairy Free Apple and Ginger Crumble Cake

This recipe is another one of my combination ideas – I wondered if you could put together an apple crumble and a sponge cake? I think you can so I’m sharing my recipe with you.

Feel free to change the fruit and spice combinations to suit your tastes.




For the cake:

  • 200g dairy free spread
  • 300g self raising gluten free flour
  • 1 teaspoon xanthan gum
  • 4 eating apples, peeled, cored and diced into 1/2cm cubes
  • 120g light brown sugar
  • 100g caster sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 4 eggs

For the crumble topping:

  • 125g gluten free plain flour
  • 50g brown sugar
  • 1 teaspoon ground ginger
  • 60g dairy free spread melted

  1. Preheat the oven to 160 oC
  2. Grease and line a 9″ round cake tin
  3. Place the chopped apples in a small bowl and toss in the cinnamon
  4. In a large bowl beat together the dairy free spread, caster sugar and light brown sugar
  5. Add in the eggs one at a time beating well between each addition
  6. Mix in the flour ground ginger and xanthan gum
  7. Stir in the apples
  8. Pour the mixture into the cake tin
  9. Make the crumble topping by mixing together the plain flour, brown sugar, ginger and melted butter
  10. Pour over the top of the cake
  11. Bake in the centre of the oven for 1 hour and 45 minutes
