Gluten and Dairy Free Apple and Cinnamon Tea Loaf

This cake is lovely and moist due to the apple and sultanas being cooked in tea before adding the flour, not what most people would expect from a gluten and dairy free cake!

  1. Add the three teabags to the boiling water and leave to infuse for 5 minutes, dispose of the teabags
  2. Place the apple, sultanas, tea, brown sugar, dairy free spread, cinnamon, ginger, nutmeg and baking powder into a large saucepan
  3. Bring to the boil and simmer gently for 12 minutes
  4. Preheat the oven to 180 oC
  5. Allow the mix to cool for about 15 minutes
  6. Stir in the eggs and gluten free flour and mix until well combined
  7. Pour into a 1lb well oiled loaf tin and bake in the centre of the oven for 40 minutes
  8. Remove from the oven and allow to cool completely
