Gluten and Dairy Free Apple, Banana and Sultana Muffins

These muffins are super moist due to the apple and the banana, you would never know they are gluten and dairy free. I’ve made the large sized muffins you would get in a coffee shop but if you prefer smaller muffins this mix would probably make about 15 but cut the cooking time down to about 20-25 minutes.

  1. Preheat the oven to 180oC
  2. Cream together the dairy free spread and caster sugar until light and fluffy
  3. Beat in the eggs
  4. Stir in the mashed banana and grated apple
  5. Mix in the flour, xanthan gum, cinnamon, nutmeg, milk and sultanas
  6. Split between 8 muffin cases
  7. Bake in the centre of the oven for 30 minutes
  8. Allow to cool before serving
