Gluten, Dairy & Egg Free Chocolate Muffins

Makes 8

Ingredients

  • 170g gluten free self raising flour
  • 40g cocoa powder
  • 180g caster sugar
  • 1 teaspoon vanilla extract
  • 280ml dairy free milk
  • 100ml olive oil
  • 20ml apple cider vinegar

Method

  1. Preheat the oven to 180 oC
  2. Line a muffin tray with 8 paper cases
  3. Whisk together all the ingredients in a large bowl
  4. Divide between the muffin cases
  5. Bake in the oven for 20 minutes
  6. Allow to cool before serving
