Gluten & Dairy Free Thai Coconut Chicken Curry

Ingredients

  • 2 chicken breasts cut into small pieces
  • 1 tbsp olive oil
  • 1 onion diced
  • 1 pepper diced
  • 1 tsp ground ginger
  • 2 garlic cloves minced
  • 1 tsp curry powder
  • 200 ml coconut milk
  • 180 ml chicken stock
  • 1 tsp cornstarch dissolved in 1 tbsp water
  • 1 tbsp brown sugar
  • 1 tbsp peanut butter
  • 1 tbsp tamari
  • 1 tbsp lime juice
  • 1 tbsp sweet chilli sauce
  • 1 tbsp fish sauce
  • 150 g rice cooked per packet
  • 1 tbsp fresh coriander chopped
  • salt and pepper for seasoning

Instructions

  • Heat the olive oil in a shallow pan over a medium heat
  • Add the chicken, onion and peppers
  • Saut√© for 5 minutes
  • Add in the ginger, garlic and curry powder and cook for a couple of minutes
  • Pour in the coconut milk, chicken stock and dissolved cornstarch
  • Stir in the brown sugar, peanut butter, tamari, lime juice, sweet chilli sauce and fish sauce
  • Bring to the boil and gently simmer for 10 minutes
  • Season to taste and stir through the coriander
  • Serve with the rice
