Gluten and Dairy Free Sultana and Cashew Nut Granola

Ingredients

  • 115ml coconut oil
  • 115ml honey
  • 50g brown sugar
  • 450g gluten free oats
  • 135g cashew nuts
  • 135g sultanas

Method

  1. Preheat the oven to 160 oC
  2. Place the coconut oil, honey and brown sugar in a saucepan
  3. Heat gently until melted and well combined
  4. Place the oats and cashew nuts in a large bowl
  5. Pour over the coconut oil mixture and stir until all the oats are well coated
  6. Spread out across a couple of lined baking sheets
  7. Bake for 30 minutes, stirring the oats halfway through cooking
  8. Allow to cool then stir through the sultanas
  9. Store in an airtight container
