Gluten and Dairy Free Spring Onion Noodle Meal Prep Box

Makes 2 boxes

Ingredients

  • 150g rice noodles, cooked according to packet
  • 2 tablespoons lime juice
  • 2 tablespoons tamari
  • 1 tablespoon peanut butter
  • 2 tablespoons water
  • 1 garlic clove, minced
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon chilli flakes
  • salt and pepper for seasoning
  • 1/2 red pepper, sliced
  • 1/2 small red onion, sliced
  • 2 spring onions, sliced
  • 1 tablespoon chopped peanuts
  • large handful of salad
  • 1 tablespoon gluten and dairy free salad dressing
  • 2 tablespoons water melon cubes
  • 2 tablespoons raspberries

Directions

  1. Whisk together the lime juice, tamari, peanut butter, water, garlic, ginger and chilli flakes
  2. Season to taste
  3. Heat a drizzle of oil in a shallow pan over a medium heat
  4. Add the onion and pepper and sauté for 5 minutes
  5. Stir in the cooked rice noodles and dressing
  6. Cook for 2 minutes then set aside to cool
  7. Divide the noodles between your two tubs and top with the spring onion and peanuts
  8. Fill the rest of the tub with the salad, salad dressing and your fruit
