Gluten and Dairy Free Spiced Salmon Tacos

Spiced Salmon Tacos

Servings 2 people

Ingredients
  

  • 2 salmon steaks
  • 1 tbsp olive oil
  • 1 tsp fajita seasoning
  • 1 teaspoon oregano
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon cinnamon
  • 1 teaspoon sugar
  • 1 tablespoon lime juice
  • 1 onion diced
  • 1 pepper diced
  • To serve
  • 4 Corn taco shells
  • 8 Cherry tomatoes halved
  • 2 tbsps coleslaw
  • 2 tbsps guacamole
  • 40 g dairy free cheese cubed

Instructions
 

  • Preheat the oven to 180 oC
  • Stir together the olive oil and fajita seasoning
  • Place the salmon steaks into a casserole dish, season with salt and pepper and drizzle with the fajita oil
  • Bake in the oven for 10 minutes or until the salmon is cooked
  • Heat a little olive oil in a shallow pan
  • Place the sliced onion and peppers in a bowl with the oregano, cayenne pepper, sugar, cinnamon and lime juice
  • Cook for eight minutes on a medium heat
  • Serve with the salmon with the vegetables, taco shells, gauacamole, tomatoes, coleslaw, tomatoes and dairy free cheese
