Gluten and Dairy Free Spiced Pineapple Muffins

Serves 6


  • 150g dairy free spread
  • 150g caster sugar
  • 3 eggs
  • 150g gluten free self raising flour
  • 2 teaspoons ground cinnamon
  • 4 tablespoons crushed pineapple


  1. Preheat the oven to 180 oC
  2. Line a 6 hole muffin tin with paper cases
  3. Beat together the dairy free spread and caster sugar
  4. Whisk in the eggs one at a time
  5. Stir in the flour, cinnamon and crushed pineapple
  6. Divide the mixture between the muffin cases
  7. Bake in the oven for 25 minutes
  8. Remove from the oven and all to cool before enjoying
