Gluten and Dairy Free Spiced Citrus Loaf

Spiced Citrus Sultana Loaf

Ingredients
  

  • 50 g brown sugar
  • 100 g honey
  • 60 ml dairy free milk
  • 60 ml fresh orange juice
  • 3 eggs
  • zest of one lemon
  • zest of one orange
  • 200 g gluten free self raising flour
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 80 g sultanas

Instructions
 

  • Preheat the oven to 160 oC
  • Grease and line a 900g loaf tin
  • Place the honey, orange juice and milk in a saucepan and warm until melted and combined
  • In a large bowl whisk together the brown sugar and eggs
  • Pour in the honey mix
  • Stir in the lemon zest, orange zest, gluten free flour, ginger, cinnamon and sultanas
  • Bake for an hour
  • Allow to cool before slicing - I served mine dusted with a little icing sugar and some dairy free spread
