Smoked Mackerel and Poached Eggs

  • 2 slices gluten free bread
  • 2 eggs
  • 2 smoked mackerel fillets
  • sprinkle of chives
  • salt and pepper for seasoning


  • Bring a pan of boiling water to a gentle boil
  • Turn down to a simmer and crack in the eggs
  • Simmer for 3 minutes
  • Remove from the pan with a slotted spoon
  • Toast the gluten free bread
  • Heat the mackerel in the microwave for 1 minute
  • Top the toasted bread with the mackerel, poached eggs, chives and season with salt and pepper
