Gluten and Dairy Free Savoury Mexican Waffles

Ingredients

For the waffles:

  • 1 egg
  • 125ml dairy free milk
  • 20g dairy free spread, melted
  • 70g gluten free plain flour
  • 1 teaspoon fajita seasoning
  • Salt and pepper, for seasoning

For toppings:

  • 1 egg
  • 2 tablespoons grated dairy free cheese, I used Violife
  • Fresh coriander

Method

  1. Beat together the egg, dairy free spread and milk
  2. Whisk in the flour, oregano, fajita mix and seasoning
  3. Pour the batter into a pre heated waffle iron and cook for 5 minutes or until golden brown, alternatively you can use this mix to make savoury pancakes
  4. Fry the egg in a little olive oil until crispy at the edges
  5. Top with the grated cheese and coriander
