Gluten and Dairy Free Pumpkin Spiced Granola

Ingredients

  • 250g gluten free oats
  • 100g cashew nuts
  • 50g peanuts
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon nutmeg
  • 160g honey
  • 50g coconut oil, melted
  • 3 heaped tablespoons pumpkin purée

Method

  1. Preheat the oven to 170 oC
  2. Stir together all the ingredients until well combined
  3. Spread the granola on a lined baking sheet
  4. Bake for 30 minutes mixing up the granola halfway through cooking
  5. Allow to cool completely before storing in an airtight container
