Gluten and Dairy Free Pink Grapefruit Curd

Makes 1 small jar

Ingredients

  • 4 eggs yolks
  • juice and zest of one medium sized pink grapefruit
  • 150g caster sugar
  • 40g dairy free spread

Directions

  1. Whisk together the egg yolks, grapefruit juice, zest and caster sugar in a small saucepan
  2. Cook over a medium heat while stirring continuously
  3. Cook until the mixture is thick enough to coat the back of the spoon
  4. Remove from the heat and stir in the dairy free spread
