  • 1 ripe peach peeled and cut into thin wedges
  • 2 tablespoons maple syrup divided
  • 40 g polenta
  • 200 ml dairy free milk
  • 1 teaspoon ground cinnamon


  • Place a shallow pan over a medium heat and roast the peach slices in one tablespoon of the maple syrup and cinnamon for about 5 minutes, or until the peach is soft
  • Place the polenta, 1 tablespoon of the maple syrup and dairy free milk in a small saucepan
  • Bring to the boil and then simmer for a couple of minutes until the liquid is absorbed
  • Pour the polenta into a bowl, top with the peaches and a some extra dairy free milk
