Gluten and Dairy Free Mexican Pork Rice

Mexican Pork Rice

Ingredients
  

  • 250 g cooked rice
  • 1 onion
  • 2 garlic cloves minced
  • 2 heaped teaspoons of fajita seasoning
  • 1 red pepper diced
  • 2 gluten free sausages cooked and sliced into rings
  • 200 g chopped tomatoes
  • salt and pepper for seasoning

Instructions
 

  • Heat a drizzle of olive oil in a large saucepan over a medium heat
  • Add in the garlic, onion and pepper, saute for a couple of minutes
  • Add in the sausage¬†and cook for about 3 minutes
  • Stir in the cooked rice, chopped tomatoes and season with salt and pepper
  • Cook for about 5 minutes
