Gluten and Dairy Free Mexican Hot Prawn Sandwich

  • 2 gluten and dairy free rolls, I used Schar’s Panini
  • 2 teaspoons dairy free mayonnaise
  • 300g prawns, shelled, cleaned and deveined
  • 1/2 teaspoon oregano
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon sugar
  • 1 teaspoon lime juice
  • 2 slices of dairy free cheese, I used Violife
  • handful of salad leaves


  1. Preheat the oven to 180 oC
  2. Heat a little olive oil in a shallow pan
  3. Add the  to the oil with the oregano, cayenne pepper, sugar, cinnamon and lime juice
  4. Cook for five minutes on a medium heat
  5. Fill the rolls with the cheese and prawns
  6. Bake for 8 minutes
  7. Remove from the oven and allow to cool slightly
  8. Add some mayonnaise and salad into the sandwich
