Gluten and Dairy Free Mexican Cheese Flatbreads

Serves 6


  • 250g gluten free plain flour
  • 1/2 teaspoon salt
  • 110ml warm water
  • 100ml olive oil
  • 1 teaspoon mild chilli powder
  • 1 teaspoon coriander leaves
  • 2 tablespoons dairy free cheese, grated


  1. Place the flour, salt, water and olive oil in a large bowl
  2. Stir until it forms a ball
  3. Knead for 10 minutes by hand
  4. Knead in the chilli powder, coriander leaves and dairy free cheese
  5. Divide into 6 balls
  6. Roll out into flat discs about 3mm thick and dust with a little flour on each side
  7. Heat a frying pan on a medium heat
  8. Cook for 3-4 minutes on each side
