Gluten and Dairy Free Meal Prep Chicken Curry

Makes 4 bowls

Ingredients

  • 1 tablespoon olive oil
  • 3 chicken breasts, cut into small chunks
  • 1 onion, diced
  • 1 pepper, sliced
  • 2 garlic cloves, minced
  • 3 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1/4 teaspoon chilli flakes
  • 2 x 400g can of chopped tomatoes
  • 200ml chicken stock
  • 80 ml dairy free cream
  • salt and pepper for seasoning

Directions

  1. Place the olive oil in a large pan over a medium heat
  2. Add in the garlic, garam masala, turmeric and chilli flakes
  3. Cook for a couple of minutes
  4. Add in the chicken and cook for 5 minutes
  5. Stir in the onions and peppers and saute for 5 minutes
  6. Pour in the chicken stock and chopped tomatoes
  7. Bring to the boil and simmer for 20 minutes
  8. Stir in the cream and season to taste
  9. Divide between four bowls and serve with rice
