Gluten and Dairy Free Kung Pao Chicken

Ingredients

For the chicken:

  • 1 tbsp cooking oil
  • 2 garlic cloves minced
  • 1/4 tsp chilli flakes
  • 1 tsp fresh ginger finely sliced
  • 2 chicken breasts diced
  • 4 spring onions sliced
  • 1 tbsp peanuts

For the sauce:

  • 2 tsps brown sugar
  • 1 tbsp rice wine vinegar
  • 2 tbsps tamari
  • 100 ml chicken stock
  • 1 tbsp cornflour

Instructions

  • Place the oil in a shallow pan over a medium heat
  • Add in the garlic, chilli, ginger and chicken
  • Saute for 5 minutes
  • Add in the spring onions and peanuts
  • Stir fry for 5 minutes
  • Whisk together the ingredients for the sauce and pour into the pan with the chicken
  • Simmer the sauce for 3-5 minutes
  • Serve with rice and top with extra spring onions and chilli flakes
