Gluten and Dairy Free Italian Chicken Tomato Soup

Serves 4


  • 400g can of chopped tomatoes
  • 1 red pepper, diced
  • 1 red onion, diced
  • 2 garlic cloves, minced
  • 2 teaspoons basil
  • 1 litre vegetable stock
  • 1 chicken breast, cut into small pieces
  • 50g gluten free pasta
  • salt and pepper, for seasoning


  1. Place a drizzle of olive oil in a large saucepan over a medium heat
  2. Add in the garlic, pepper and onion and sauté for 5 minutes
  3. Pour in the chopped tomatoes and vegetable stock
  4. Bring to the boil then add the chicken and pasta
  5. Simmer for 15 minutes
  6. Stir in the basil and season to taste
  7. Serve
