Gluten and Dairy Free Herby Waffles with Poached Eggs

Ingredients

  • 3 eggs
  • 125ml dairy free milk
  • 20g dairy free spread, melted
  • 70g gluten free plain flour
  • 1 teaspoon mixed herbs
  • salt and pepper for seasoning

Method

  1. Beat together one egg, dairy free spread and milk
  2. Whisk in the flour, herbs and seasoning
  3. Pour batter into a pre heated waffle iron and cook for 5 minutes or until golden brown
  4. Alternatively you can use this mix to make savoury pancakes
  5. Poach the remaining two eggs for 3 minutes and serve with the waffles
