Gluten and Dairy Free Frosted Banana Bread


For the banana cake:

  • 115g dairy free spread
  • 115g caster sugar
  • 2 eggs
  • 3 ripe bananas
  • 130g gluten free self-raising flour
  • 80g ground rice
  • 1 teaspoon baking powder

For the frosting:

  • 125g dairy free spread
  • 230g icing sugar
  • 20g cocoa powder

To decorate:

  • dairy free chocolate buttons
  • banana chips
  • 1 tablespoon peanut butter, optional


  1. Preheat the oven to 180 oC
  2. Grease and line a 6″ round baking tin
  3. Cream the dairy free spread and sugar together until light and fluffy
  4. Add the eggs, beating well between each addition
  5. Mash the bananas and add to the mixing bowl
  6. Add in the dry ingredients and mix well
  7. Spoon the cake mix into the baking tin
  8. Bake in the oven for 1 hour and 10 minutes
  9. Remove from the tin and leave to cool on a rack before frosting
  10. Make the frosting by beating together the dairy free spread, cocoa powder and icing sugar
  11. Spread on top of the cake
  12. Decorate with the banana chips and chocolate buttons
  13. Soften the peanut butter in the microwave for 20 seconds and drizzle on top of the cake
