Gluten and Dairy Free Egg & Tomato Bagel Melts

  • 2 gluten free bagels halved
  • 1 tsp dairy free spread
  • 4 eggs
  • salt and pepper for seasoning
  • 1 tbsp dairy free milk
  • 2 tbsps dairy free cheese grated
  • 1 spring onion
  • 4 cherry tomatoes quartered


  • Toast the bagels and set aside
  • Beat together the eggs, seasoning and dairy free milk
  • Melt the dairy free spread in a pan
  • Pour in the egg mix and push around until scrambled
  • Top the four bagel halves with the scrambled egg
  • Sprinkle on the grated cheese and top with the cherry tomatoes
  • Place under the grill for a couple of minutes until the cheese melts
  • Top with the sliced spring onions
