Gluten And Dairy Free Egg Mayo & Smoked Sausage Baked Potato

Serves 2



  1. Preheat the oven to 220 oC
  2. Rub the potatoes in olive oil
  3. Bake in the oven for 20 minutes
  4. Turn down the heat to 180 oC
  5. Bake for another hour
  6. Boil the eggs for 10 minutes
  7. Remove the shell and chop up
  8. Mix together the eggs, mayo, mustard, basil, seasoning and smoked sausage
  9. Fill each potato with the egg mix
  10. Top with a little paprika
