Coriander and Coconut Salmon

  • 150 g rice cooked according to the instructions on the packet
  • 2 salmon steaks
  • 2 tsps fish sauce
  • 1/2 tsp ground ginger
  • 125 ml coconut milk
  • 1 garlic clove minced
  • 5 g fresh coriander leaves
  • 1 tbsp brown sugar
  • 1 tbsp lime juice
  • Salt and pepper for seasoning


  • Preheat the oven to 180 oC
  • Place the salmon steaks in a casserole dish
  • Put the fish sauce, ginger, coconut milk, garlic, coriander, brown sugar, lime juice and seasoning in a blender
  • Blitz until smooth
  • Pour over the salmon and bake in the oven for 15 minutes or until your salmon is cooked
  • Serve with your cooked rice
