Gluten and Dairy Free Chorizo, Chicken & Potato Stew

Serves 2

Ingredients

  • 1 tablespoon olive oil
  • 2 chicken breasts, diced
  • 280g potatoes, peeled and cut into small cubes
  • 1 onion, diced
  • 1 red pepper, diced
  • 50g chorizo, double check it is milk free
  • 1 teaspoon smoked paprika
  • big pinch of chilli flakes
  • 2 garlic cloves, minced
  • 400g tin of chopped tomatoes
  • 200ml chicken stock
  • salt and pepper, for seasoning

Directions

  1. Place a large saucepan with the olive oil, over a medium heat
  2. Brown the chicken for 5 minutes
  3. Stir in the garlic, paprika, onion, pepper, chorizo and chilli flakes
  4. Saute for 5 minutes
  5. Stir in the potatoes, chicken stock and chopped tomatoes
  6. Bring to the boil and simmer for 20 minutes or until the potatoes are tender
  7. Season with salt and pepper
  8. Serve
